Ingredients You'll Need

Dry Ingredients:

  • 1 1/2 cups oats
  • 1 cup Bob’s Red Mill gluten-free 1:1 flour
  • 2 scoops Truvani Pumpkin Protein Powder
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients:

  • 1 cup mashed ripe banana
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup olive oil
  • 1/2 cup milk (your choice of milk)
  • 1 tsp vanilla extract

Crumble Topping:

  • 1/2 cup chopped walnuts
  • 1/4 cup oats
  • 2 tbsp coconut flour
  • 1 tsp cinnamon
  • 1/4 cup melted coconut oil
  • 1/3 cup monk fruit or coconut sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tins with liners.
  2. In a large bowl, combine the dry ingredients: oats, flour, Truvani Pumpkin Protein, coconut sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the wet ingredients: mashed banana, pumpkin puree, eggs, olive oil, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry and stir until everything is well combined.
  5. In another small bowl, mix the crumble topping ingredients: walnuts, oats, coconut flour, cinnamon, melted coconut oil, and sweetener of choice.
  6. Spoon the muffin batter evenly into the muffin liners and sprinkle the crumble topping over each muffin.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean.
