Superfood Pumpkin Spice Donuts Recipe 🎃🍩

Donut Ingredients:

  • 2/3 cup almond flour
  • 1/2 cup Bob's Red Mill 1:1 Baking Flour
  • 1/2 cup coconut sugar
  • 1 teaspoon baking powder
  • 1/4 cup milk of choice (I used Malk)
  • 1/2 cup pumpkin puree
  • 1 egg
  • 4 teaspoons Blume's Pumpkin Spice Superfood Latte Blend

Icing Options:

Simple Mills Frosting (store-bought option)

OR

Healthier Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 cup powdered coconut sugar (blend coconut sugar to create a powdered consistency) or monk fruit sweetener
  • 1 teaspoon vanilla extract

Directions for Donuts:

  1. Preheat your oven to 350°F (175°C).
  2. Spray your donut pan with oil to prevent sticking.
  3. In a bowl, combine all donut ingredients—almond flour, Bob's Red Mill baking flour, coconut sugar, baking powder, milk, pumpkin puree, egg, and Blume's Pumpkin Spice Superfood Latte Blend. Mix until well combined.
  4. Spoon the batter into the prepared donut pans, filling each cavity about 3/4 full.
  5. Bake for 12-15 minutes, or until a toothpick inserted into the donuts comes out clean.
  6. Let the donuts cool completely before frosting.

Directions for Frosting:

  1. In a separate bowl, beat the softened cream cheese and butter together until smooth and creamy.
  2. Gradually add in the powdered coconut sugar or monk fruit sweetener, along with the vanilla extract. Continue to beat until the frosting is light, fluffy, and well combined.
  3. Once the donuts are cooled, spread or pipe the cream cheese frosting on top.
  4. For an extra fall touch, sprinkle a little cinnamon on top of the frosted donuts. 🍁
