Ingredients You’ll Need

These cookies come together with simple ingredients you probably already have on hand! Here’s what you’ll need:

  • 3/4 cup unsalted butter, softened
  • 1 cup light brown sugar or coconut sugar
  • 2 egg yolks, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup canned pumpkin puree
  • 1 1/4 bobs mill gluten free flour 
  • 1.5 tablespoons Blume’s Pumpkin Spice Superfood Mix
  • 1/2 teaspoon baking soda & 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

1. Prepare the Pumpkin Puree

*Dont make the mistake by skipping this step!**

Start by preparing the pumpkin puree. Spread it onto a plate, cover with a paper towel, and press lightly to absorb any excess liquid. Repeat until the puree is reduced to about 1/4 cup. This step is key for keeping the cookies chewy rather than cakey.

2. Combine Dry Ingredients

In a medium bowl, whisk together the flour, Blume’s Pumpkin Spice Superfood Mix, baking soda, baking powder, and salt. Set this mixture aside for now.

3. Cream the Butter and Sugar

In a large mixing bowl, cream the softened butter and brown sugar with an electric mixer on high speed until it’s light and fluffy. This should take about 1-2 minutes and will give the cookies a tender, chewy texture.

4. Add Egg Yolks and Vanilla

Add in the egg yolks and vanilla extract, mixing until smooth and fluffy. This adds richness and depth to the cookie dough.

5. Incorporate the Pumpkin Puree

Mix in the prepared pumpkin puree, blending until it’s fully incorporated into the butter mixture.

6. Combine Wet and Dry Ingredients

Slowly add the dry ingredients to the pumpkin mixture, mixing on low speed until just combined. Be careful not to overmix, as this can make the cookies tough.

7. Form Cookie Dough Balls

Using a cookie scoop or your hands, form dough balls (about 2 tablespoons each) and place them on a parchment-lined baking sheet about 2 inches apart. Flatten them down slightly.

8. Bake

Bake the cookies in a preheated oven at 350°F (175°C) for 12-14 minutes. For a chewier texture, go with 12 minutes; if you prefer slightly crispier edges, aim for 14 minutes.

9. Cool and Enjoy
